  • Do not skimp on the syrup. Under soaked croissants come out dry in the middle, which is the usual home failure.
  • Frangipane on top as well as inside. That top layer is what holds the flaked almonds on.
  • Fresh croissants do not work. If yours are fresh, leave them out uncovered overnight first.
