- Score the chocolate before it hardens completely. It is the only way to get clean squares.
- A heavy based pan for the caramel. A thin one produces burnt patches you cannot stir out.
Variations
- Sea salt over the chocolate before it sets, which cuts the sweetness considerably.
- Dark chocolate on top, which balances the caramel better than milk does.
- A layer of toasted pecans between the caramel and the chocolate.
Cut small and eaten at room temperature. Cold from the fridge the caramel is hard and the chocolate has no flavour.
