The flavour is rounder and less sharp than espresso because of how it is made. Tips

  • The working ratio is 60g of coffee per litre of water. Everything else is adjustment around it.
  • Water at 94C, so boil it and wait about thirty seconds. Water straight off the boil strips the sweetness out.
  • Filter coffee goes flat after about twenty minutes on a hotplate. Brew less more often rather than keeping a jug warm.

Variations

  • A cafetiere with the same ratio gives a heavier cup because none of the oil is filtered out.
  • Cold brew uses the same grounds at four times the coarseness, steeped in cold water for sixteen hours.
  • A dark roast bean makes it closer to the Starbucks house cup; a light roast brings out the acidity instead.
